Dr. Scott E. Fuller serves as Associate Professor and Graduate Coordinator in the School of Kinesiology at the University of Louisiana at Lafayette, a position he has held since joining as Assistant Professor in 2016. He holds a Ph.D. in Kinesiology with a major in Exercise Physiology from Louisiana State University (2013), an M.S. in Kinesiology (Exercise Physiology) from LSU (2005), an M.P.A. from LSU's E.J. Ourso College of Business Administration (1998), and a B.A. in History from LSU (1993). Prior to his faculty appointment, Fuller completed an NIH T32 Ruth L. Kirschstein National Research Service Award postdoctoral fellowship in Adipocyte Biology at LSU's Pennington Biomedical Research Center (2013–2016), where he also served as Adjunct Assistant Professor. Earlier roles include graduate assistantships at LSU's Department of Kinesiology (2006–2010).
Fuller's research centers on exercise physiology, investigating metabolic adaptations in skeletal muscle, liver, and adipose tissue in response to exercise, ketogenic diets, high-fat feeding, and botanical supplements, with applications to obesity, type 2 diabetes, and metabolic syndrome. Key publications include 'Impaired mitochondrial fat oxidation induces adaptive remodeling of muscle metabolism' (Proceedings of the National Academy of Sciences, 2015), 'Diosgenin, 4-hydroxyisoleucine, and fiber from fenugreek: mechanisms of actions and potential effects on metabolic syndrome' (Advances in Nutrition, 2015), 'Groundsel Bush (Baccharis halimifolia) Extract Promotes Adipocyte Differentiation In Vitro and Increases Adiponectin Expression in Mature Adipocytes' (Biology, 2018), 'Adaptive Fat Oxidation Is Coupled with Increased Lipid Storage in Adipose Tissue of Female Mice Fed High Dietary Fat and Sucrose' (Nutrients, 2020), and 'Combined effects of a ketogenic diet and exercise training alter mitochondrial and peroxisomal substrate oxidative capacity in skeletal muscle' (American Journal of Physiology - Endocrinology and Metabolism, 2021). His contributions extend to studies on Louisiana native shrubs like groundsel bush for combating metabolic disorders, in collaboration with Pennington Biomedical Research Center and Rutgers University. Fuller has earned the 2021 College of Education Rising Star Award for Research, NIH postdoctoral fellowship, and travel awards for presentations at Experimental Biology meetings. He has reviewed for journals such as Current Pharmaceutical Biotechnology and Advances in Nutrition, and served as an abstract reviewer for Experimental Biology conferences.
