Dr. Glenn Cardwell serves as Lecturer in Food Science and Nutrition within the School of Medical, Molecular and Forensic Sciences at Murdoch University. He is also affiliated with the Discipline of Public Health at Curtin University. Holding a Bachelor of Science from Curtin University, Cardwell is an Accredited Practising Dietitian with over 32 years of experience in clinical and public health nutrition. His career includes 10 years as consultant dietitian to the National Heart Foundation, five years at the Children's Hospital in Sydney, and a major role in establishing the WA School Canteen Association in 1994. He founded Nutrition Impact P/L in 1996, served as sports nutrition adviser to the West Coast Eagles for 14 years and the Western Force for its first two seasons, and helped establish Sports Dietitians Australia in 1996.
Cardwell's research focuses on photochemistry, biochemistry, and food science, particularly the influence of ultraviolet radiation on vitamin D in mushrooms. His 2018 review 'A Review of Mushrooms as a Potential Source of Dietary Vitamin D' has been cited more than 460 times. Key publications include 'Effect of household cooking on the retention of vitamin D2 and 25-hydroxyvitamin D2 in pulse UV-irradiated air-dried button mushrooms (Agaricus bisporus)' (2023), 'The Retention of Vitamin D2 and 25-Hydroxyvitamin D2 in Pulse UV-Irradiated Dried Button Mushrooms (Agaricus bisporus) after 12 Months of Storage' (2023), and 'Effect of air-drying on the generation of vitamin D2 and 25-hydroxyvitamin D2 by pulsed UV irradiation in button mushroom (Agaricus bisporus)' (2022).
Cardwell has authored books such as 'Gold Medal Nutrition' (four editions), 'Diet Addiction', 'Getting Your Kids to Eat Well', 'Top Blokes Food Manual', and two for the Heart Foundation. An award-winning speaker, he has delivered presentations on healthy eating, sports nutrition, and weight control throughout Australia, New Zealand, Malaysia, Spain, South Africa, and Britain. He edited the 'Fuel' newsletter for Sports Dietitians Australia for 10 years and makes frequent TV and radio appearances.
