Professor Elizabeth Redmond is Professor of Food Safety, Health and Behaviour in the Cardiff School of Sport and Health Sciences at Cardiff Metropolitan University. Holding a PhD and BSc (Hons), she has dedicated over 30 years to the institution, including its previous iterations as UWIC and CIHE, engaging in food safety research since the mid-1990s. Appointed to her current professorial role in 2022, she leads the Food and Drink Research Unit at the ZERO2FIVE Food Industry Centre and serves as Director of Studies and supervisor for post-doctorate, PhD, professional doctorate, masters, and undergraduate projects in food safety. Redmond has been Principal Investigator for more than 25 multidisciplinary research initiatives funded by prominent bodies such as the UK Food Standards Agency and Welsh Government, fostering collaborations with international partners in France, Lebanon, Brazil, the USA, and New Zealand. She has also taken on invited roles in national and international funding, editorial contributions, and PhD examining, alongside serving as a trustee for a leading international scientific authority.
Redmond's research specializations centre on social, cognitive, and behavioural factors influencing food safety across consumer, healthcare, and food industry sectors. Her work particularly addresses consumer practices related to specific pathogens, infant feeding, and vulnerable populations including chemotherapy patients and older adults, as well as food safety culture in manufacturing and service environments, and education for healthcare professionals such as dietitians. She develops theory-based, data-driven interventions to enhance risk-reducing behaviours and reduce foodborne disease incidence. With over 55 peer-reviewed publications and more than 190 conference presentations, key contributions include 'Microbiological and observational analysis of cross contamination risks during domestic food preparation' (Redmond et al., 2005, British Food Journal), 'Assessing hand hygiene in food manufacturing: The feasibility of CCTV surveillance' (Evans et al., 2025, Food Control), and 'Meal Kits and Food Safety Unboxed: Understanding Consumer Perceptions and Stakeholder Roles' (Melville et al., 2026, Food Protection Trends). In recognition of her supervision excellence, she co-won the 'Exceptional Supervisory Team of the Year' award at Cardiff Metropolitan University's inaugural Doctoral Researcher Supervisor Awards.
