She holds a Bachelor of Health Science from the University of South Australia, where she also completed her Honours research involving the UniStArt study on first-year university students. Wilson earned her PhD investigating dietary and non-dietary factors influencing maternal omega-3 fatty acid levels during pregnancy. In her career, she has taught various science and nutrition courses, both internally and online, at the University of South Australia and contributed to developing new courses there. She received the UniSA Vacation Research Scholarship to support her UniStArt research efforts. Wilson is eligible to supervise Masters and PhD students as a co-supervisor.

She has also examined the role of meditation to improve children's health. Key publications include Wilson, N. A., Mantzioris, E., & Villani, A. (2024).
